You know I'm all about making life easy here on The Pink Flour, so today I'm sharing an easy recipe for Cheesy Broccoli & Ham Crepes.

I love crepes, because they're so versatile and seem so elegant, like you spent hours in the kitchen, when in actuality they're pretty easy to make. And I love how you can make them with sweet or savory ingredients - that way you make one thing and you can use it for the main dish and dessert :)

You'll see my recipe really makes it pretty simple. The only really cooking is of the crepes themselves. If you can make pancakes then I guarantee you can make crepes. Everything else just uses the good 'ole microwave.

My experience with Velveeta in the past has only been in macaroni & cheese and the occasional dip at a party. I never really thought to use it beyond those. But I have to say it was so easy to use and helps eliminate any of the guess work from this recipe. You can check out my shopping trip for this recipe HERE. 

Cheesy Broccoli & Ham Crepes

Yields: 8 crepes

  • 1 cup Bisquick
  • 3/4 cup milk
  • 2 eggs
  • 1 lb. Velveeta (I used half of the Velveeta 2 lb. Loaf)
  • 1 1/2 cups milk
  • 12 ounces broccoli florets
  • 1/2 lb. sliced deli ham
1. In a small bowl, whisk together the Bisquick, 3/4 cup milk & eggs until smooth. Grease a small skillet (6-7 inches) with butter or cooking spray and heat at medium-high To make a crepe, pour approximately 2 tablespoons of batter into the skillet and immediately rotate the skillet around so that the entire bottom is evenly covered. Cook until golden brown. Gently loosen edge with spatula; flip and then cook other side until golden brown. You can Stack crepes as you remove them from skillet, placing waxed paper between each. I recommend keeping crepes covered to prevent them from drying out. Repeat until you have used up all of the batter. 

2. Cut the Velveeta Loaf in half and cut one half into 1/2 inch cubes and place into microwave safe bowl. Pour 1 1/2 cups milk over the Velveeta and then microwave for 2 minutes. After 2 minutes, take out bowl and stir. Then microwave again for 1-2 minutes stirring each minute until cheese is fully melted and all milk has been combined with the cheese.

3. Cook the broccoli using your preferred method. I just microwaved it for 3 minutes in a bowl with about a tablespoon of water, but you could also steam it.

4. Assemble the crepes by placing one on a plate, then down the center place 2 slices of ham, a handful of broccoli and then spoon the Velveeta on top (approximately 2 tablespoons). Fold up the sides and then drizzle some more cheese on top. Enjoy!
